Summertime Favorites: Quick & Easy 3-Ingredient Salsa!

Happy Thursday everyone! I am SO happy it is Thursday, because that brings us 1 day closer to Friday and this weekend I am bringing my hubby on a surprise trip to thank him for the endless nights of me sitting in front of the computer working on weddings, blogging away, and working on my biz. He has no idea where we’re going but I’ve given him a few clues, and I plan to give him a little “brochure” that I’ve created about the weekend to give him a little more info about what to pack - should be fun! Of course I can’t fill you in yet but I will definitely post pictures when we’re back on Sunday!

So in honor of warm summer days I want to share a quick, easy and delicious recipe with you today - the most delicious and flavorful salsa I’ve ever had! My cousin went on a trip to Mexico over the winter and came back with this little gem, so of course I had to do a post about it to fill you all in.

Here’s what you need:
5 chile de arbol peppers
3 cloves garlic
3 roma tomatoes
Blender or food processor

Step 1:
Place tomatoes directly over gas burner or on grill to char the skins slightly (~1-2 minutes each side). Don’t judge me that I put a cookie sheet over my burners. Also don’t judge me that my stovetop is not squeaky clean.

Step 2:
Cut ends off of peppers and trim bottom of garlic.

Step 3:
Throw garlic and peppers in to blender (or food processor) and mix for about 10 seconds (or to desired consistency).

Step 4:
Add charred tomatoes to blender, mix for about 10 seconds (or until desired consistency).

That’s it! Pour in to a pretty bowl and serve with tortilla chips - or, over scrambled eggs with cheese wrapped in flour tortillas for a nice little breakfast.

So easy and soo delicious (and not too spicy, either!) If you like it spicy, add a few more peppers! This is a great way to add some flavor to your protein-packed meals if you’re on operation wedding dress, without the added calories and fat!

    I love that it uses fresh tomatoes. Usually all recipes you find are for canned. I am in operation swimsuit mode :) so maybe I can sneak by eating some of this :). And hopefully you’ll share the brochure you’re giving him too… sounds like such a cute idea!

    How simple is that! I only started eating salsa within the last year or so and I love it. I might have to try that sometime and impress my husband. Enjoy your trip with your hubby! Oh, and I spotted your wedding rings in one of the shots with your blender. Sooo PRETTY!!!

    eeee, how fun! Your hubby won’t know what hit him. I can’t think of a better way to thank the husband of a blogger than to whisk him away on a surprise getaway. And it’s good for your soul too. Good to turn off the computer and forget us for awhile…have fun!

    This salsa looks wonderful - I made chicken, goat cheese and spinach quesadillas last night and really needed something to dip them in…hello salsa:)
