this one would be a perfect side to some chicken parm or by itself with a crisp salad on the side and a nice chardonnay :)
sciue sciue (italian translation - little thimbles)
salt
1 1/2 cups ditalini (or other small tube shaped pasta, like elbow macaroni or pennette)
2 tablespoons olive oil
3 garlic cloves, minced
1 1/2 cups cherry/grape tomatoes (taste really good from the farmer’s market :)), cut in halves
8 oz fresh mozzarella, cut in to 1/2″ cubes
8 large basil leaves, coarsely chopped
bring a large saucepan of salted water to a boil (i add some olive oil to keep pasta from sticking). add the ditalini and cook, stirring often until tender but firm to the bite, about 8 minutes.
meanwhile, in large, heavy skillet, heat the oil over medium heat. add the garlic and saute’ until fragrant, about 1 minute. add the tomatoes and saute’ just until heated through, about 2 minutes. add the cooked pasta. remove skillet from heat, add the cheese & basil and toss to coat. season with salt. spoon in to small serving bowls and serve immediately.
